Bicarbonate of soda does clean an oven, but it needs a night, not twenty minutes, and it won’t shift everything. A thick paste left on the baked-on spatter overnight softens most of it enough to wipe off in the morning, and that isn’t a folk remedy: it’s the method an oven manufacturer, Beko, gives in its own guide. Where it struggles is the racks and the door glass, and that’s the point where you decide whether a caustic product is worth its warnings.

First check what kind of oven interior you have

This matters more than the cleaning method, because the wrong method damages two of the three types. I hadn’t realised there were three types until I read the guides.

Plain enamel. The standard rented-flat electric oven. Smooth, glossy, dark grey or black inside. You can use bicarbonate, and you can use a caustic cleaner if you choose to. Everything below applies.

Catalytic liners. Some ovens have rough, matt, slightly porous panels on the sides and back. They’re designed to absorb and burn off grease at high temperature, and Beko’s guide says that you do not need to clean them, because they clean themselves once the oven reaches 200°C. Scrubbing them or pasting them with bicarbonate clogs the surface and stops them working. Clean the enamel floor and door as normal and leave the liners alone.

Pyrolytic. A pyrolytic oven has a self-cleaning programme that heats the interior “up to 480 degrees Celsius” and burns the residue to ash. Beko describes a “120-minute cycle or an Eco cycle that runs for 90 minutes”, with all trays and side racks removed first. If you have one of these, you have a third option, and you shouldn’t paste bicarbonate on a pyrolytic liner either. Check the model number on the frame of the door if you’re not sure.

Beko’s guide also says to check that any product you use is suitable for your oven’s interior before you start.

The overnight bicarbonate paste, step by step

Beko’s instructions, given for “hard to clean areas”, are short: “Make a paste with baking soda and water. Place this over problem areas and leave to sit overnight. In the morning, wipe off the cleaning paste and spray the oven’s interior with vinegar”, then “Clean the oven’s interior thoroughly using water.” Baking soda is bicarbonate of soda; it’s the same thing under its American name.

Here’s how that goes on a standard electric oven in a kitchen with no extractor, which is what most small flats have.

  1. Do it the evening after the oven was last used, once it’s completely cold. Take out the racks and any trays.
  2. Mix bicarbonate with a little water in a bowl until it’s the thickness of toothpaste. A spreadable paste sticks to the walls; a runny one slides to the floor of the oven. A normal single oven takes most of a small tub.
  3. Spread it with a spatula or a gloved hand over the floor, walls and the inside of the door, thickest on the burnt patches. Avoid the fan cover at the back, the heating element and the door seal.
  4. Leave it overnight.
  5. In the morning, scrape and wipe it out with a damp cloth or a plastic scraper. Spray the interior with vinegar; the fizz where it meets leftover bicarbonate lifts the last of the residue.
  6. Wipe everything down with clean water, changing the water at least twice. Any bicarbonate left behind smokes and smells the next time the oven is on.

The limitation is that a paste softens fresh and moderate spatter; it doesn’t dissolve the black, glassy carbon that’s been cooked on again and again. Those patches need a second night, a scraper, or something stronger.

Racks and the door glass: where bicarbonate struggles

Racks are the hard part of any oven clean because the grease is on a wire, not a flat surface, and a paste won’t sit on a wire overnight.

What works is a soak. The bath is the obvious container if you have one; if not, a large bin liner in the sink does the job. Line the bath with an old towel to protect the enamel, lay the racks in, add hot water, a generous squirt of washing-up liquid and a couple of handfuls of bicarbonate, and leave them for a few hours or overnight. Most of the grease then comes off with a scouring sponge. A scouring sponge is abrasive enough for chrome racks; wire wool scratches them. If you’re in a shared house, this is the one step worth warning people about, because a bath full of oven racks on a weekday evening is the sort of thing that starts an argument.

Door glass is a different problem. Bicarbonate paste sits on it fine, but the deposits are usually thin, even and baked hard, and a night softens them without lifting them. A plastic scraper or an old bank card at a low angle takes off what the paste has loosened. Don’t use a metal blade on the glass.

Anything still there after a soak and a scrape is the category where people reach for a caustic product.

What caustic cleaners actually are and why the label is so blunt

Most heavy-duty oven cleaners are sodium hydroxide, which is caustic soda. It works by turning fat into soap, which is why it dissolves baked-on grease so fast, and it does exactly the same thing to skin. That’s not a scare line; it’s the chemistry.

Oven Pride’s own listing carries the hazard statement “Causes severe skin burns and eye damage”. The instructions say “Leave to soak for 4 hours, ideally overnight” and “Ventilate the room during and after use”. The “do not” list is long: do not “Use on a hot oven”, do not “Use on aluminium, zinc, copper, tin, painted, damaged, self-cleaning or non-stick surfaces”, and do not let the solution touch the “glass oven door, door seals”.

Read that against a rented flat’s oven. The door seal is rubber and the caustic degrades it. Any non-stick tray or aluminium baking sheet that goes in the bag with the racks will come out grey and ruined. And the glass is excluded, which takes away the one place bicarbonate was weakest anyway.

So the comparison is this. Bicarbonate is slow, needs a night, and leaves some carbon behind, but it can’t hurt you, the oven, or the deposit. Caustic cleaner is fast and thorough on racks and enamel, and the label tells you plainly what it does to eyes and skin. In a small kitchen with no extractor, I’d make the slow one the default.

If you do use one: cold oven, gloves, windows open, nowhere near the seals

If the racks are beyond a soak, or the oven has to go back to the landlord spotless, a caustic product is sometimes the only realistic option. Then follow the label to the letter.

  • Cold oven only. The label says not to use it on a hot oven, and heat makes the fumes worse and the reaction faster.
  • Gloves that cover the wrist; the long ones that come in the box are there for a reason. Eye protection if you have it; if not, keep your face out of the bag and the oven.
  • Windows open before you start and left open afterwards; the label says to ventilate “during and after use”. With no extractor, open the kitchen window and a window in the next room to get air moving through.
  • Keep it off the door seal, the glass, and any aluminium or non-stick tray. Racks go in the bag; nothing else does.
  • Contact time is 4 hours minimum, ideally overnight. Then rinse the oven and racks thoroughly with clean water, several times, because residue that’s left behind will end up in the next roast.
  • Never mix it with anything else, and don’t use it in the same session as an acid descaler or bleach in the same room.

Store what’s left, capped, high up and away from food. If you share the kitchen, tell whoever else lives there that it’s in the oven overnight, so nobody comes down at midnight and preheats it for a pizza.

Keeping it clean between deep cleans

An oven clean sits in the “rarely” tier of the weekly cleaning schedule, which means two or three times a year. What keeps it there rather than monthly is stopping the spatter reaching the enamel in the first place.

Line the roasting tin with foil or baking paper, and put a tray on the shelf below anything that might drip. Batch-cooking days are the ones to watch, because with three trays in something always bubbles over; the article on what freezes well covers the cooking side. A lined tray costs pennies and saves a night of bicarbonate.

Wipe the oven floor while it’s still warm, not hot, after anything that has spat. Fresh fat comes off with a damp cloth. The same fat baked on for another six weeks does not.
